Circa - Parramatta
Good things come to those who wait, and wait I did. Though… while it took longer to get an espresso than it would normally take to get a pour over, the attention to detail for each coffee was awesome. As for the vibe of this cafe, it is nice to see that the renovations have only improved the funky, rustic, artistic feel. Sure the inside seating is little limited, but if you’re lucky enough to get a seat, it is worth it.

I started off with the Ethiopian single origin, a Sidama Ardi (natural), that really eased in slowly with a touch of semi sweet peach, and then it opened up with a little more natural sweetness towards the end. While it could have had a cleaner finish, it was pretty darn nice.

To follow it up I went for a house blend (from whatever the season blend is) and ordered a mac which was…. ok… What was really depressing was watching the perfectly measured espresso, well packed, well espressed, filled with love…ruined by a glug of milk, and then then… to mess with my head, spun and swirled it.

So why the 5 stars? The passion and preparation for each coffee was exceptional, it is just a pity that it took so long to serve, and that touch too much milk. Still this place is certainly one of the best cafes in the area.
