What I’ve Been Drinking – An Ethiopian Djimmah Filter on a Costa Rica Geisha Aeropress

Coffee is all about experimentation and sometimes these experiments bring something new to experience (and I am all up for that). Today, leaving my fate in the hands of The Reformatory, I was made what is more similar to a cocktail that a straight up coffee.

Starting with an inverted Aeropress they layered in a fine grind of the Geisha, and then rather than stop there, they then added a paper filter and filled it with a courser grind of Djimmah. Letting the Djimmah bloom as it pours through the filter, the idea is to extract the finer more delicate notes of the Ethiopian (which as an espresso roast was brilliant), and then to let the concoction brew in the Areopress for a couple of min to build the body from the Geisha.

The result is a complex array of sweetness, robust body that really develops into something totally different as it cools and opens up. Leaving quite a dry mouth feel, it was an enjoyable experience. Personally, I think I still prefer having the individual roasts separately and then being able to compare and contrast, but I am glad that someone is trying to push the boundaries.
